Foodservice Recipe: Honey Lemon Carrots

Farm to School Foodservice Recipe

Ingredients

1 1/4 cup unsalted butter

1 1/4 cup honey

2 Tbsp lemon juice concentrate

1 Tbsp ginger root, raw, minced

18 lb carrots fresh

Procedure

  1. In a larger bowl, mix together carrots, melted butter, honey, lemon juice, and ginger. Mix until carrots are completely coated.

  2. Place carrot mixture onto a sheet tray or baking sheet with edges (in a single layer) and roast in an oven at 400 degrees for 20 minutes. Stir in pan after baked to coat with sauce. Hold hot for service.
