CACFP Recipe: Tuscan Grilled Cheese
Farm to School Foodservice Recipe
Ingredients
3/4 cup Margarine, trans fat-free
2 tsp Garlic Powder
1 tsp Dried Basil
1 tsp Dried Oregano
100 slices Whole Grain Bread
4 lbs Chopped Baby Spinach
100 slices Mozzarella Cheese
50 Fresh Tomatoes, 1/4" slices
Procedure
Preheat oven: Conventional oven: 400 °F. Convection oven: 350 °F.
Melt margarine in a medium stock pot
Add garlic, basil, and oregano. Stir well. Set aside for step 12.
Place bread slices on a sheet sprayed pan. Set aside for Step 8. Save remaining bread for Step 11.
Spray chopped spinach lightly with olive oil pan release spray and place in a shallow steam table pan in hot oven for 3 minutes.
Remove and separate spinach into 25 (½ cup) servings.
Place the following on each slice of bread; 2 slices of cheese, ½ c. spinach, and tomato slice.
Place 1 slice of bread on top of each sandwich.
Brush the top of each sandwich with margarine mixture.
Bake until lightly browned: Conventional oven: 400 °F for 15-20 minutes. Convection oven: 350 °F for 10-15 minutes.
